There are many things one can do with a Vitamix, but I didn’t grasp the true beauty of my new must-have kitchen appliance until I made bolognese sauce, and then homemade ‘Vitamix crepes’ in this magical machine. We made a ton and they froze beautifully so that lunches and breakfasts became easy!

Vitamix Crepes

When you make crepes, it is important to ensure your eggs are at room temperature. I used to gently add the flour into the milk to ensure there were no lumps, but with a Vitamix, the powerful motor does this for you. My only caution is that you don’t want to mix the batter for a full smoothie cycle, or the eggs could get beaten too much. I just pulse the machine, and then let the batter sit for 5 minutes before the crepes are made.

How to Make Vitamix Crepes

This is so easy it’s embarrassing.

1. Place all ingredients in the Vitamix and pulse.

2. Place about 2T. oil in a crepe pan and pour about a 1/4 c. batter in. Gently swish the batter around so that a thin layer covers the pan and cook 2 minutes. There is no need to flip. When the edges lift slightly and present as golden brown, the crepe is ready to remove from the pan.

I stack the crepes on a plate, and after eating the ones we want, allow the rest to cool. You can freeze altogether in a bag, or if you want to be able to remove them individually while still frozen, place parchment or wax paper between each crepe and freeze.
