This low-fat leftover turkey sandwich is pretty much why you go to so much work to make Thanksgiving, Christmas or Easter dinner. Using half the fat mayo makes it even lighter.

4 slices of multigrain bread
2 1-oz slices of part-skim provolone cheese
1/2 cup ripe avocado slices
2 Tbsp. mayonnaise
1 cup alfalfa sprouts
2 6-oz slices skinless leftover turkey (white meat)

Toast bread slices. Cut leftover turkey into pieces and toss with mayo. On one slice of bread, layer cheese, sliced avocado, turkey mix, alfalfa sprouts and top with second slice of bread. Tip: serving with raw veggies or a side salad makes this a great sandwich to share with a friend.
Makes 2 portions.

Turkey Sandwich-Making Tips

  • Have fun with leftovers. Sandwiches are a great way to transform leftovers into a delicious snack or meal. Try unusual fillings to make the most out of leftover food.
  • Plan ahead. Gourmet-inspired ingredients such as caramelized onions, seasoned mayonnaise, and roasted red peppers can take a sandwich from ho-hum to amazing. Prepare ingredients that require a little extra effort ahead of time or on the weekends when you’re less busy and keep them in the fridge to use all week.
