Rice Krispies Muffins

Rice Crispies ShapesWouldn’t it be awesome to send the kids to school with healthier snacks? You just may win free Rice Krispies for a year. Oh yeah!!!! Introducing, Kelloggs Rice Krispies Muffins using Multi-grain shapes.

INGREDIENTS

  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 cups Kellogg’s Rice Krispies Multigrain Shapes cereal
  • 1 1/4 cups milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup semi-sweet mini chocolate morsels

DIRECTIONS

1. In small bowl, combine the 1 tablespoon sugar and cinnamon. Set aside for topping.

2. Stir together flour, the 1/2 cup sugar, salt and baking powder. Set aside.

3. In large mixing bowl, combine KELLOGG’S MULTIGRAIN SHAPES cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg, oil and chocolate morsels. Beat well. Add flour mixture,stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray. Sprinkle evenly with sugar-cinnamon topping.

4. Bake at 400°F for about 20 minutes or until lightly browned. Serve warm.

Microwave Directions:

1. Prepare as above. Portion 1/4 cup batter into 12 paper-lined custard cups. Sprinkle with sugar-cinnamon topping. Arrange 6 cups on
microwave-safe plate in center of microwave.

2. Cook on HIGH 2 minutes. Rotate the plate 1/4 turn and cook on HIGH 1 minute longer. With hot pads, carefully remove muffins from microwave and place on wire rack. Repeat with remaining muffins. Let stand on wire rack 5 minutes before serving.

Urban Mommies Five Tips for a Fabulous Family Road Trip

When I was a child, our summer vacations were usually a three hour journey from our front door to the door of where we were staying. Most of the time we journeyed to our vacation destination via car and ferry. My sister and I loved that our parents were sharing with us all of the fabulous sites that our province had to offer whether we were camping by a lake, staying in a cottage by the ocean, or exploring the coast in an RV.

Now that I’m a mother myself, I am taking a page out of my parents’ book. My husband and I alternate our family vacations between destinations that you travel to by plane with places closer to home that travel to by taking a road trip.

Our last road trip was an epic two day journey from Vancouver to Calgary in 30 degree heat with a 1 year old, a 5 year old, a 12 year old yorkie and two very cranky parents. I think the kids survived the road trip better than the parents and the dog did. Despite all of the “bumps in the road” we managed to have a great time, see sites both awe inspiring (Lake Louise) and entertaining (The Enchanted Forest in Revelstoke) and spend time bonding as a family.

5 Tips for a Fabulous Family Road Trip

After our trip, I put together 5 tips to make future road trips smoother. Pin them for easy reference for your next road trip.

5 Tips for a Fabulous Family Road Trip:

1. Make Your Road Trip About the Journey, Not The Destination- It’s so easy to get caught up in “We have to be to X destination by X day.” When planning your next road trip try to throw your timeline to the wind and enjoy your journey. Not getting caught up in how long it’s taking you to get from here to there will allow you to enjoy your stops more and not get so frustrated when the kids need an extra pee stop or chance to stretch their legs.

2. Be Flexible- Children can be unpredictable.  Sometimes naps happen and it’s better to let sleeping children lie than wake them for a pre-scheduled activity and risk the crankies. Save the stop for your trip back home and continue on or take a road trip break, find a shady parking spot, roll down the windows and enjoy a good book.  Be willing to be flexible depending on your children’s moods. Making a trip to the history museum may not be the best plan if your kids are feeling cooped up and extra rambunctious. Being prepared to make unexpected changes depending on the moods of your passengers will lead to a much happier family road trip.

3. Plan Ahead- Research pit stops along the way, a list of pet friendly parks and hotels if you are traveling with a furry companion, family friendly restaurants, gas stations and site seeing opportunities. Even if you don’t end up needing all the resources you collect you’ll be happy to have them when you need them, especially when you get stuck in the mountains with no data coverage. (Does it sound like I’m speaking from experience???)

4. Bring Food… Lots of it- Nothing causes the crankies like an empty tummy. Bring a range of snacking options, in pre-portioned containers or snack bags and make sure that you put them someplace that is easy to access. Fruits, veggies, nuts and seeds are all great great snack options but make sure to include some treats as well to avoid expensive gas station cravings.

5. Plan Entertainment- Before I was a mom, I swore up and down that I would NEVER have a DVD player in my car. Now that I am a mom I often rethink that decision. Let’s face it, even the most amazing kids can get bored when cooped up in a car for too long. Hearing “Are we there yet?” for the 100th time will try any parent’s patience. Create a playlist of family friendly songs on your phone, learn the words to a few good road trip tunes, research car road trip games, find a few car travel games and activities and when all else fails… have your kid’s favorite movie loaded on the iPad.

Summer Road Trip Travel Essentials Giveaway

Summer TravelSummer is finally here, meaning you’ll be spending lots of time in the car for day-trips and vacations with the family. We know road trip packing can be stressful – it’s mom’s job to be prepared for the unpredictable and remember everything, right?! To ensure your vacation starts off on the right foot, here is a list of our top summer travel tips and tricks. Take time to prep

  • Dedicate time well before departure to plan your pack—yes plan. Check the weather forecast, ensure flight times are accurate, check construction and closures and find alternative routes to make a realistic travel route to get you there on time. If flying, remember to double check what you can bring in your carry-on to avoid anything being thrown out.
  • Avoid the morning of mad dash to gather all necessary toiletries and invest in a travel set of essentials.  Do you need a full size shampoo and conditioner for the family to share, or can you use the adorable mini travel-sized items, like the super cute and convenient mini Scope Outlast ($2.99*) to maintain fresh breath on the go? If you have essentials you just can’t duplicate, like an electronic toothbrush, add them to your last minute pack list.

Make a list, check it twice

  • Involve the kids – throughout the week have the kids write down items they use in the day on a chalk or white board in a central location (i.e. kitchen fridge).   • The lighter the better! We know packing with kids and pets it may be difficult to live by this mantra, however keeping things light and simple leaves room for souvenirs.
  • Downsize by bringing items that have more uses than one. Playtime! Let’s Level the Field

At UrbanMommies some of our most popular articles focus on ‘energy busters for toddlers’, ‘top fun and educational iPad apps for kids’ and ‘games to play at the beach’.  In North America, we place an incredibly high value on playtime and as parents, we are taught to spend at least 30 minutes per day on the floor with our kids, building lego, throwing a ball or stacking blocks.

The other day, my 5 year old and I waited for my older son to finish his tae kwon do class at our local community centre.  While we waited, we… blush.. played tag in the lobby.  This boisterous disruption would typically be frowned upon in another atmosphere, but his giggles incited smiles on faces of all of the other parents.  I felt like a rockstar.  Best Mom Ever.   (Little do they know…) And my child was happy, active and connected.  The approving looks from other moms only reinforced that in our society, we value play pretty highly.

Skills learned from sport teach our kids determination, leadership abilities, fairness, equality, how to be a part of a team, how to balance play and school, drive, and discipline.

Don’t you think it’s odd that only 5% of Canadians surveyed in a 2012 Ipsos Reid poll believed that play is important in developing countries?  Read: Play is a luxury only when healthcare, conflicts, education and other problems are dealt with.  I’d love to try and explain that to my 5 year old.  “Sorry dear.  We can’t play ball.  We need to debate health care reform and do something about gun control first.  Maybe when you’re older.”

Don’t the lessons learned through play work towards resolving all of these big issues?
