Summer Asian Pasta Salad

With all the barbeques, picnics, and entertaining we do all summer long, this Asian Pasta salad is sure to be a hit wherever you take it. It can easily be doubled for big crowds, and is quick and easy to prepare. You will need:
Pasta salad
- 450 gram package of Wheels, Penne or Fusilli – We love the fun shapes you find in Italian markets
- 1 fresh tomato diced
- ½ cucumber diced
- 1 can of baby corn
- 1 can of sliced mushrooms
- 1 can sliced black olives
- 3 table spoons of toasted sesame seeds
Dressing
- ½ cup olive oil
- ½ cup unseasoned rice vinegar
- ¼ cup Soya sauce
- 2 cloves minced garlic
- Salt and pepper to taste
- 2 tablespoons sesame oil
Directions:
- Cook pasta until al dente and rinse with cold water. In a large bowl mix pasta, vegetables and sesame seeds together. In a separate bowl mix all dressing ingredients together and then add to the pasta mix. Chill and enjoy!
