Mini Fruit Muffins

Good for 9 months and up
This is a great recipe for babies that are gaining independence and attempting to eat on their own. It’s small and easy to hold making it a nutritious snack or as part of breakfast.
Suitable for children 9 months and up
Makes 36 mini muffins
What you’ll need:
- 2 cups self rising flour
- 1 teaspoon cinnamon
- ½ cup firmly packed brown sugar
- ½ raisins
- 1 cup milk
- ½ cup butter
- 1 egg, beaten lightly
Grease a 12 hole mini muffin tin. Combine flour, cinnamon, sugar, raisins in a large bowl. Stir in milk, butter and egg: don’t over mix (batter should be coarse and slightly lumpy). Pour into muffin tin and bake at 350 for 15 minutes or until browned.
You can easily vary the flavor of these muffins my changing the raisins to dried apricots, seeded dates, or prunes.
Storage: Airtight container for up to 2 days or in freezer.
